My children love scrambled eggs, so instead of cooking separate meals, this is the twist I put on my meal so there is not very much extra fuss or muss about my diet. The children get the delicious meal they crave and their metabolisms can handle, while I am able to still sit with them and enjoy basically the same thing.
2 scrambled egg whites, seasoned
1 piece of whole wheat toast topped with 1/8 of a fresh avocado. (avocados provide a serving of important fats that are very healthy for you when consumed in small portions.)
1 whole orange, peeled
V8 drink. Yes, that is a can of V8. I have come to love V8, and it is the one food item in the house that the children don't fight me for. They don't like the taste, so this is the one and only food I can enjoy completely by myself. When it comes to nutrition, one can of V8 contains 2 full servings of veggies with only 70 calories (all very healthy calories), 0 fat, high in fiber, potassium, protein, and vitamins and minerals, need I say more? So when V8 goes on sale, or when I have coupons (even better if V8 goes on sale AND I have coupons, woo hoo!), I like to spoil myself a little.
Though this breakfast looks small, don't let that fool you. This meal is loaded with nutritious calories that will last all morning and won't make you feel heavy or loaded down.
